Thumbprint Cookies with Chocolate Espresso Ganache

Just imagine adding a secret ingredient to this super easy cookie recipe! Instant espresso powder in it AND chocolate. Instant espresso is preferred for these cookies. Traditional grounds will be too coarse and unappealing. Just the pinch of the espresso powder will intensify the flavor without giving you a mocha flavor.

That’s two of my favorite flavors, all in one delicious place. I also really enjoy the homemade flavor and taste. Too good to be true, right? Miracles do exist!. Can we all just agree that store-bought cookies literally NEVER taste as good? Ever?

Why are they called thumbprint cookies?

The name is true to the cookie. In the cooking process, you’ll actually be making a divot in the cookie to add in the chocolate goodness. It just so happens that our thumbs make the perfect circle size for all the goodies to fit in.

Ingredients 

  • 1 C unsalted sweet cream butter, softened
  • 1 C sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1 tbsp instant espresso powder
  • 2 C flour
  • ½ C dark chocolate Hershey powder
  • 1 ½ tsp kosher salt
  • 1 package of Dove Milk Chocolate Eggs
  • 2 C Easter Sprinkles 

Thumbprint Cookies with Chocolate Espresso Ganache

Chocolate Ganache Ingredients

  • 1 C semi-sweet chocolate chips
  • ½ C heavy whipping cream
  • 1 disposable piping bag

How to make Chocolate Thumbprint Cookies

  • Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper
  • Using a large bowl, beat together the butter and sugar until light and fluffy
  • Beat in the egg, vanilla, and coffee powder until combined
  • In a medium bowl, whisk together the flour, cocoa powder, and kosher salt
  • Gradually beat in the dry ingredients until combined
  • Using a small ice cream scooper, scoop the cookie dough into your hand and roll it into a ball
  • Roll the cookie dough into Easter sprinkles
  • Place onto the cookie sheet
  • Using your thumb, make an indent into the center of the dough
  • Place into the oven and bake for 8 minutes

Allow cooling completely.

Chocolate ganache directions

  • Using a small pot, bring the heavy whipping cream to a simmer
  • Pour over the chocolate chips into a heatproof bowl
  • Allow sitting for a minute before whisking until smooth
  • Allow the ganache to sit to cool for 5 minutes
  • Spoon into the piping bag
  • Fill in the center of the cookie with the ganache
  • Unwrap the Dove chocolate egg and place it into the center of the ganache 
  • Enjoy!
