The football season is here and you know what that means: FOOD!! I’m all about the delicious appetizers. My husband loves football and watches it every week. Sundays are football days which means lots of appetizers for our family and friends to enjoy, like this Chicken Fajita Queso Dip.

This Chicken Fajita Cheese Queso Dip really takes Football Sundays to a whole new level of deliciousness. I found the recipe on Inside Bru Crew Life and thought I give a twist by using queso fresco instead.

Chicken Fajita Queso Dip

When we think of party food things like chicken wings, spreads, dips, and sliders of all kinds come to mind. We are always looking for a new appetizer for parties and get together with friends and relatives.  I’ve been on a mission to come up with something tasty for gatherings.

One of our favorites is chips and dip or chips and cheese.

This oey-gooey cheesy dip is quick to make and will definitely disappear immediately once it’s served! This delicious Chicken Fajita Queso dip goes perfect with chips, tortillas, or if you are looking for keto snacks or low carb options, pair it with veggies for dipping.

Any way you choose to serve it, it will be sure to be a hit with family and friends.

Since nothing goes better with a margarita than chips and dip, I’m bringing you this easy, chunky Chicken Fajita Queso Dip for your dipping pleasure.

Chunky Chicken Fajita Queso Dip 

Most dips I’ve tried are yellow. This take on Queso is different and amazing! We love to use Cacique Queso Fresco for our cheese dips, so for our fajita queso dip, it wasn’t going to be any different! For over 40 years, Cacique’s Mexican-style products have used only the finest ingredients and authentic recipes.

Making Chicken Fajita Queso Dip

Begin by dicing up the peppers, onion, and tomatoes.  I used about 1/3 of each pepper, half the onion, and all of my tomatoes.

Saute the veggies in a large skillet coated in oil.  Season with garlic powder, cumin, and red pepper flakes to taste.

After the veggies are softened add the canned chicken breast and the lime juice. We marinated the chicken the night before. Break up the chicken and continue cooking until the chicken is warm.

While the chicken and veggies cook, dice up the Cacique Queso Fresco and add to a saucepan with the whipping cream.

Cook over low heat until the cheese is melted and the sauce is smooth.

If the sauce isn’t thick enough you can combine a little flour and whipping cream to stirring in as a thickener like you would do when making gravy.

When the cheese sauce is ready and the chicken mixture is heated combine them in a medium bowl. If you are looking for some delicious keto snacks these are great options too.

  • 1 Yellow Pepper
  • 1 Red Pepper
  • 1 Orange Pepper
  • 1 Small Jalapeno (OPTIONAL)
  • 1 Small Red Onion
  • 1 Large Tomato

  • 1 tbsp Lime Juice
  • 1 Can Chicken Breast, 12.5 oz
  • 1 Package Cacique Queso Fresco
  • Garlic powder, Cumin, Red pepper flakes to taste
