Making an easy dish like Rice with Pigeon Peas or Arroz con Gandules, as we call it in Spanish is peace of mine these days. Things are hectic at home due to the quarantine. Parents ar now teachers so having to balance work with helping our children with school work, and throwing together food for the family can be challenging. That’s why an easy dish is key in these hectic days. Arroz Con Gandules is a recipe that brings back many memories of my childhood.

We love rice dishes, so I’ve put together a perfect, easy snack to throw together. It tastes great and is now a staple side at all of my family’s get-togethers!
An Easy Dish that Satisfies

This easy dish is perfect for busy days when you just don’t have time to be in the kitchen for hours. The thing I love about it is that it’s delicious and satisfying, but I don’t have to toil in the kitchen to make it. That’s always a winner in my book. All it takes to make this delicious, easy dish is Hellmann’s, Lipton Recipe Secrets, and Knorr. With this recipe, I can whip something up that tastes amazing, saves me time and money, and still satisfies everyone at the table. It’s perfect!
To begin, you’ll need ingredients that you can find at your local store.
Rice with Pigeon Peas
Using just a few ingredients, you can make a delicious dish that saves time and money, and that’s what it’s really all about, isn’t it? So get your cooking hat on and be ready to take it right back off again! Keep in mind that everyone has a little twist on how they prepare it, however, this is how I prepare mine.
Ingredients
- 1 Tbsp. olive oil
- 1/2 cup chopped ham
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 3 cloves garlic, chopped
- 1 large tomato, chopped
- 2 cups of water
- 1 package Knorr® Rice Sidesâ„¢ – Chicken flavor
- 1 can (15.5 oz.) pigeon peas, drained and rinsed
- Pinch Salt
Directions
Heat oil in a large skillet over medium heat and cook ham, stirring occasionally, until golden, about 2
minutes.
Add onion and green pepper and cook, stirring occasionally, until tender, about 5 minutes. Add garlic and cook, stirring, 30 seconds until fragrant. Add tomato and cook 1 minute.
Stir in water, Knorr® Rice Sidesâ„¢ – Chicken flavor and pigeon peas. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 7 minutes or until rice is tender. Stir in salt. Let stand 2 minutes before serving.
Serve, if desired, with cilantro and sliced olives.
