Noodles may not come to your mind when you’re thinking of healthy noodle meal options, but with just a few tricks up your sleeve, you can transform them into a filling, delicious and nutritious meal that you can whip up quickly after a long day at work.
Busy days driving kids around, trying to stick to your schedule and trying to get through your to-do list (that damn to-do list!) is hard enough but add the pressure of feeding your family (or just yourself) and it’s enough to tip anyone over the edge. I can’t stand the “what’s for breakfast/lunch/dinner?”
I get like clockwork every day because you know what? Sometimes I don’t know. Sometimes I stand in front of the fridge willing the food inside to inspire me. That’s if I managed to make it to the supermarket.

Hot Garlic Noodles
These hot garlic noodles are the perfect way to use any leftover veggies you might have. Start by sauteing your choice of veggies (bell peppers, onions, carrots, cabbage, green beans, broccoli or brussels sprouts) in some oil and a generous amount of chopped garlic, throw in the boiled noodles and follow up with some soy sauce and red chili sauce.
Beef Stir Fry Noodles
Looking for a recipe that works for the entire family? You definitely can’t go wrong with this one. Start by preparing the sauce- mix soy sauce with some oyster sauce, sesame oil, chopped ginger and garlic, and some ground black pepper.
In a pan, heat some oil and stir fry beef, which has been sliced thin into 3 inch long strips. You can also add some sliced carrots and broccoli florets into it. Remove from heat and combine it with the sauce and some boiled noodles. That’s it!
Rice Noodle Salad
You’ve seen my delicious Easy rice dish Arroz con gandules, but did you know you can also whip up a quick rice noodle salad? Ready within minutes and perfect if you are looking to make those noodles healthier.
Simply toss together some boiled rice noodles with chopped red onion, bell peppers, iceberg lettuce, jalapeno peppers, and olives. Squeeze a little lemon juice over the top and season with salt and red chili flakes.
Prawn Noodle Bowls
Got some prawns in the freezer? Pop them out and get cracking on this easy noodle bowl recipe. In a small bowl, mix together mayonnaise, some sriracha, garlic, sweet chili sauce, and sometimes juice and set it aside.
The oven cooks the shrimp by marinating it with some olive oil, salt, and paprika powder. In a bowl, toss the shrimp together with the sauce and some boiled noodles, and garnish with chopped coriander.
There’s nothing better than healthy noodle meal options like a bowl of steaming hot noodle soup at the end of the day right? And guess what- there’s actually an easy version of your very own 4-hour pho!
Start by sauteing some chopped ginger and garlic in a large pot, add boneless chicken strips seasoned with some salt and pepper, and cook for a couple of minutes.
Then add in some chicken stock, hoisin sauce, fish sauce. Right before serving, add boiled noodles, sliced jalapenos – because I know you love jalapeno recipes like my easy jalapeno appetizers – bean sprouts, and some chopped parsley.
Teriyaki Chicken Noodle Bowls
Super filling and amazingly delicious, you must give these noodle bowls a shot! Marinate chicken strips in a mixture of teriyaki sauce and some corn flour-water slurry and cook it on high heat in a large pan.
Now add boiled noodles, some more teriyaki sauce, a sprinkle of toasted sesame seeds, and a generous amount of chopped green onions and give it a final mix!
How to eat Noodles
After looking and reading about all these delicious and healthy noodle meal options, who doesn’t love noodles? I always had a difficult time eating noodles and would roll them on my fork the Italian way, turning them into a small nest.
Until I learned to use chopsticks! Oh my!
The trick to eating wth chopstick is to eat them right so you don’t make a big mess. Did you know that slurping is allowed in many cultures? So that’s one less thing we need to worry about.
Grab these chopsticks and spoon from Amazon to mix the ingredients of your noodles evenly. When eating noodles, vegetables, and/or meat, grab the ingredients together and dip them into the sauce.
In between bites, scoop up the broth with your spoon and sip it until your noodles are gone. Eating the last bits of your noodles with your spoon may become difficult.
